Jar Sessions Riff on Thousand Island
Bring back a classic ideal for salads, crudité, and grilled meats and fish with our riff on Thousand Island dressing.
1/2 a 12-ounce jar of pickled cherry tomatoes, reduced to about a 1/4 cup, then cooled
1 tablespoon dijon mustard
3/4 cup to 1 cup of olive oil or vegetable oil
hot sauce to taste
salt and pepper to taste
2 hard-cooked eggs, chopped
1/4 cup of chopped parsley
Combine the egg, reduced tomatoes and mustard in a food processor.
While the machine is running, slowly add the olive oil to create a mayonnaise.
Fold in eggs and parsley.
Add some hot sauce, season and refrigerate.
