Pickled Cherry Tomato Barbecue Sauce
Sweat 1 diced red onion and 3 cloves of minced garlic in vegetable oil.
Add 1/2 cup of brown sugar, caramelize.
Blend 1 jar of pickled cherry tomatoes, add.
Continue cooking until mixture is thick, then add 1 quart of tomato puree.
Simmer for 15 minutes.
Season to taste with salt and pepper and hot sauce.
