Jar Sessions Pimento Cheese


Yields 2 quarts


1 12-ounce Jar Sessions Pickled Sweet Peppers
1 12-ounce Jar Sessions Pickled Cherry Tomatoes (dill sprigs removed)
1 egg
1 yolk
1 1/2 cup vegetable oil
1/2 onion, minced
20 ounces cheddar cheese, grated
4 ounces cream cheese, softened
1 tablespoon sweet smoked paprika
1 tablespoon hot smoked paprika
Salt and pepper


Strain each jar and reduce liquid until almost dry; cool.

Combine reduced liquids, jar contents, spices and eggs in a food processor.

Blend until combined.

Slowly add the oil while the machine is running to create a mayonnaise.

Blend in the cream cheese.

Fold in cheddar and onion, and season to taste.

Serve with crackers, chips or crudité — also great on grilled vegetables, meats or fish.
