Deviled Eggs With Chow Chow
(Yields 24)
Ingredients and Directions
12 eggs, hard-cooked and peeled
Cut each egg in half, scoop yolk out
Place yolks in food processor
Add:
1 tablespoon Dijon mustard
3 tablespoons mayonnaise
Blend until smooth, move egg filling into a small mixing bowl
Add:
1 shallot, peeled and minced
1 tablespoon chopped dill
Season with salt and pepper
Place in piping bag and fill egg white halves
Garnish each with a spoonful of chow chow
Serve!
