Pickled Cherry Tomato Chicken Wing Glaze

This recipe is courtesy of Frank Hutman, sous chef at Vie. The pickled tomatoes add an extra level of vinegary goodness to the glaze, a mouthwatering complement to your chicken wings.

Ingredients for Glaze

1 12-oz. Jar Sessions Pickled Cherry Tomatoes
1 cup sugar
1/2 cup honey
2 teaspoons minced garlic
1 cup water
1/3 cup soy sauce
1 tablespoon favorite hot sauce

When Ready to Use

1 tablespoon butter
36 chicken wings
scallions for garnish

Directions

Empty contents of 1 jar of Jar Sessions Pickled Cherry Tomatoes into a pot over medium high heat. Begin reducing until it is half its original volume, about 1 cup.

In a separate pot, combine the sugar, honey, garlic and water, and cook over high heat until it starts to boil rapidly. Reduce heat to medium and simmer for 10 minutes.

Meanwhile, blend the reduced tomato, liquid and spices, and add to the sugar, honey and water. Cook for 3 to 4 minutes.

Add the soy sauce and hot sauce to the pot, stirring to combine. Cook until the contents coat the back of a spoon.

Remove from heat and store in the refrigerator until ready to use.

When ready to use, fry chicken wings using your preferred method. Put the glaze into a pot and bring to a simmer. Whisk in 1 tablespoon of butter and pour the glaze over your wings, tossing them in a bowl to coat evenly. Garnish with sliced scallions.
