Pickled Asparagus and Olive Relish


This flavor-packed relish is delicious on roasted or grilled meats and makes an addictive addition to your next graze board.

Yields 2 quarts


2 cups grilled onions, coarsely chopped
2 cups olives of your choice (pitted), drained and coarsely chopped — reserve 1/4 cup brine
2 15-ounce Jar Sessions Pickled Green Asparagus, drained and coarsely chopped — reserve brine
1/4 cup champagne vinegar
1 cup EVOO
salt and pepper to taste


Heat asparagus brine, olive brine and vinegar in a pan and reduce liquid by half. Cool.

Combine liquid with all ingredients listed above, and season with salt and pepper.
