Prairie Fruits Farm-Jar Sessions Pimento Cheese Dip

This recipe makes a large serving — 4 quarts — of pimento cheese, the perfect amount for a big party or picnic. Or, give the gift of pimento cheese: Package the dip in pint-size containers and delight your very best friends. Moonglo is a sharp, nutty cheese from the wonderful folks at PFF, and it blends beautifully with the flavors from the pickled peppers and tomatoes.

Ingredients

1 12-ounce Jar Sessions Pickled Sweet Peppers
1 12-ounce Jar Sessions Pickled Cherry Tomatoes
1 egg
1 yolk
3 cloves garlic
2 cups vegetable oil
1 sweet onion, minced
1 pound, 11 ounces PFF Moonglo, grated (where to purchase)
3 pounds fresh goat cheese, softened
salt and pepper

Directions

Strain each jar and reduce liquid until almost dry.

Combine eggs in a food processor with garlic.

Slowly add the oil while the machine is running to create a mayonnaise.

Add the reduced liquids and pickles.

Blend until combined.

Blend in goat cheese.

Fold in Moonglo and onion.

Season and serve!
