"My grandmother Rita used to make a sweet, vinegary tomato salad with fresh dill and onions. During those late Missouri summers when it was hot and humid, the salad was always a nice cool and refreshing contrast. While this Jar Session was definitely inspired by my grandmother's salad, we replaced the onions with rich notes of garlic.
"While these tomatoes are delicious straight out of the jar, I often purée the entire contents of the jar and blend with EVOO to make a tangy vinaigrette. You can also try using them as a secret ingredient in a rich tomato sauce."
