Roasted Delicata Squash With Garlic, Chili Flake and Pickled Sweet Peppers

A colorful and delicious side dish, perfect for your fall and winter tables.

Serves 2 to 4 people

Ingredients

1 delicata squash (or any other fall or winter squash), washed and seeded
1 tablespoon chopped garlic
1 teaspoon chili flakes
3 tablespoons vegetable oil
1/2 12-oz. Jar Sessions Pickled Sweet Peppers, drained and chopped
2 tablespoons brine from the Pickled Sweet Peppers
salt and pepper to season

Directions

Cut the squash in half lengthwise and slice into 1/4-inch half moons.

Preheat a sauté pan with the cooking oil to medium high heat, add the cut squash.

Brown the squash to caramelize about 5 minutes.

Add the garlic and chili flake, cook another minute.

Add peppers and brine to deglaze and finish.

Season and serve!
